Dinner for Two!

Okay you guys, this is a judgement free zone and this day was most definitely a cheat day! I wanted to share with you our Valentine’s Day Dinner. We made a surf and turf dinner oh and you can’t forget the Carbs! We decided instead of going out to dinner to make a gourmet meal at home. *side note: we didn’t make a reservation and everywhere was booked! Shh!! Don’t tell anyone* We couldn’t decide on what we wanted so hey, why not make it all! We got garlic bread, we got scallops, steak, pasta, and WINE.. Always gotta have the wine. My favorite is sparkling Rosé, Doug’s is a nice Malbec so did we get both, DUH!
Anyways, enough about us let’s dig into the mouthwatering delicious food. Every so often I am going to share recipes of mine that I love. Today I am sharing my juicy garlic butter & herb steak, pan seared scallops and then to top it off my favorite creamy garlic pasta…. This is not a meal to make on a first date unless you want to be kissing a whole head of Garlic…. Sorry Babe! Check out the recipes below and enjoy!

Garlic Butter & Herb Steak
(2) Filets (or cut of your choice)
(2) Cloves of Garlic (rough chop)
( ½ -1) Stick of Butter (Unsalted/softened)
(1) TBSP of olive oil
Salt & Pepper (to taste)
Dried Rosemary
Dried Thyme
Dried Oregano
*you can use any herb combination you like these are my favs*
Steps:
Start by taking your softened butter and garlic adding it into a mixer and combine. Slowly start to add your herbs, salt and pepper. Once everything is combined take butter mixture and place in the fridge to stiffen up for 15-20mins.
Next take your steaks and make sure they are dry, season lightly with salt and pepper. Heat up a cast iron skillet medium to high heat and add in your oil once the skillet is hot add in your steaks. I like mine at medium so about 6-7 minutes each side. While cooking add a dollop of your butter mixture and baste. We want to get all those yummy flavors into the meat. Once the steak is done cooking add another dollop of the butter mixture to the top of the steaks and enjoy!
Pan Seared Scallops
(3.5) ounces of Scallops
Butter (Unsalted)
* you can also use your left-over butter mixture from the steak, YUM! *
Salt & Pepper
Steps:
Heat up a cast iron skillet to medium to high heat and add your butter. While that is heating up take your scallops make sure they are dry and season with salt and pepper to taste. Once the skillet is hot add in your scallops and sear for 2-3 minutes on each side. Enjoy!
Creamy Garlic Pasta
(8) Ounces of Linguine Pasta
(2) TBSP of Butter (Unsalted)
(4) Cloves of Garlic (minced)
(2) Cups of Chicken Broth
(1) Cup of Milk or Cream
( ½ ) Cup of Fresh Parmesan Cheese (grated)
Steps:
Heat the butter in a large sauce pot over medium to high heat. Then add your garlic and cook for roughly 1-2 minutes or until fragrant stir frequently. Then take your chicken broth, and milk and stir into the pot once combined add in your uncooked pasta. Bring to a boil and then simmer for 15-20 minutes or until your pasta is cooked through.
Once pasta is cooked through take your parmesan cheese and fold into the pasta. You can always add a little more milk or cream if your sauce is too thick. Once the cheese is combined remove from heat and enjoy!
